making homemade chicken noodle soup
4 cups chopped, cooked chicken meat - 1 pkg of gold n plump is perfect size (about 1.5 lbs) 1/4 cup chopped carrots 8 ounces egg noodles ( I use one 12 oz pkg of NO YOKES) 12 cups water 9 cubes chicken bouillon (7-9 depending on what you like for saltiness) 1/2 teaspoon ground black pepper 1 bay leaf 1 tablespoon dried parsley
opt. 1/2 cup celery 1/4 cup minced onion 1/4 cup butter
Directions 1. In a large stock pot, saute celery and onion in butter or margarine. (OPT.) 2. Add chicken, carrots, water, bouillon cubes, black pepper, bay leaf, and parsley. Simmer for 30 minutes. 3. Add noodles, and simmer for 10 more minutes.
If you skip the celery and onion, boil the water and cook the chicken separately... put water in stock pot and bullion, then add cooked chicken once starts to simmer, and all the rest that it says, minus the noodles.

went to Cantina 1 for lunch with a dear dear friend, and then had potroast and baked potatoes for dinner at my inlaws!! it was a yummy day!

Last night I made creamy pesto shrimp pasta. VERY unhealthy ... I joke that it's a "sometimes" food because there's so much cream and butter. My DH loves it so I make it for him on occasion as a special treat. Creamy Pesto Pasta (wth shrimp or crab) 1 pound pasta 1/2 cup butter 2 cups cream 1 cup parmesan cheese, shredded 1/3 cup pesto sauce 1 pound shrimp or crab meat, cooked Cook the pasta per box directions and drain. Meanwhile, melt the butter in a large, deep skillet over medium heat. Add the cream and heat, stirring continuously, for 6-8 minutes. Add the parmesan and stir until blended. Add the pesto and stir. Add the shrimp or crab meat and stir until heated through. Serve over pasta. I like to serve it with a big salad and some crusty bread. If I have cooked quinoa in the house I'll add some to my pasta dish to make it slightly healthier. Yum!!

Chicken in mushroom cream sauce over brown rice and green beans
I threw this together tonight and it turned out pretty good. The sauce was cream of mushroom soup, 3/4c milk, dash of Lawry's, dash of garlic salt and 2Tbs. Sour cream. Whisk together, pour over cubed chicken and heat until bubbly.
