Ground Beef Tacos www.melskitchencafe.com/2008/04/tacos-supreme.htmlI love these! So much better than the packet stuff that I don't really like as much as I use too since actually trying a real taco at a restaurant lol. DD2 loved it too (she isn't a fan of the packet stuff either)

I need a miraculous idea quick! DH's Monday Guys Nite was cancelled. I don't have anything planned cuz if he isn't home, I don't cook dinner. And TOMORROW is grocery day so my options are limited. Too bad the man refuses to eat breakfast for dinner.

Salad greens with extra carrots, cheese, grilled chicken strips. I just remembered I bought all necessary ingredients on Saturday and then didn't have to use them.

Kinda pathetic, but I got home from work late and made myself a berry-kale-oj smoothie. Since I've got a cold it felt good on my sore throat. If anyone likes smoothies, this one is yummy and ridiculously healthy. You can't taste the kale. I put in a handful of ice cubes, 3/4 cup of mixed frozen berries, two big handfuls of kale, a scoop of protein powder, 1 tablespoon of ground flaxseed, and a cup of juice (usually orange juice). Puree thoroughly in a blender.

Salad, salads, salads
We've got so much lettuce in our garden! Luckily it is a variety of types and we have not yet gotten sick of salads. We've been incorporating different things with the lettuce to avoid boredom. Tonight there was grilled chicken and stealhead trout to top it.
