Well, it's a mixture of two recipes..heheh...I don't follow recipes, I use them as a guide. But I am pretty sure I can put one together for you. When I get home this evening, I will pull out my guides and type them up for you ladies.

Chicken wild rice sounds wonderful. I find when making rouxs that it is easier for me to mix the flour with the milk first and then add it to the butter. Otherwise I end up with flour lumps. Yuck!

I adapted this from an epicurious recipe: African Curried Cococnut Soup 2 tablespoons canola oil 1 medium onion (about 6 ounces), chopped 1 medium red bell pepper (about 6 ounces), chopped Generous amount of chili powder 2 large cloves garlic, finely chopped 2 cups low-sodium vegetable broth 1 package frozen chickpeas 1 can fire roasted diced tomatoes Generous amount of curry powder 1/2 teaspoon salt, or to taste Freshly ground black pepper, to taste 1 (14-ounce) can coconut milk 1 cup whole wheat Israeli couscous handful chopped fresh parsley preparation In a medium stockpot, heat the oil over medium heat. Add the next 4 ingredients and cook until onions soften. Add the broth, chickpeas, tomatoes, curry powder, salt, and black pepper; bring to a boil over high heat. Reduce the heat and simmer gently, uncovered, stirring occasionally, about 10 minutes. Add the remaining ingredients and cook, stirring occasionally, until heated through, about 5 minutes. Serve warm. The original recipe is at www.epicurious.com/recipes/food/views/African-Curried-Coconut-Soup-with-Chickpeas-352349#ixzz28XNqQpaz--------- WOW! This was GOOD!

For a quick fix for that craving, Shore Lunch and Bear Creek make cheese soup and you mix it with beer and add ham and/or chicken for a really yummy Hearty Beer Cheese Soup.

I have a clam chowder soup that I really like. It's the Manhattan (red) chowder. I use lots of extra veggies in mine, more than the recipe calls for. And sometimes I skip the bacon because I want to speed up the process--plus bacon is getting expensive! Note--you gotta do this on a day when you'll be home for an hour-plus before dinner because it has to simmer for a long time. But here's my recipe:
Manhattan Clam Chowder
5 (6.5 ounce) cans minced clams, drained 1 large potato, diced 1 onion, chopped 1/2 teaspoon salt 1 pinch ground white pepper 4 slices bacon 1 large carrot, grated 8 ounces tomato sauce 2 tomatoes, chopped 1 stalk celery, chopped 2 cups water
Dice bacon, cook in large saucepan with onion and celery until crisp and onion golden. Pour off most of fat. Add 2 cups water, potatoes, carrots, salt, pepper, thawed tomatoes, and clam juice from cans. Simmer 1 hour. Add tomato sauce and clams. Simmer 15-20 minutes or until just boiling.

Hmmm sounds awesome if I could find fake clams. I know good fake bacon but have not encountered fake clams. But I know how good Manhattan Clam Chowder is from my sinful days.

I'm looking for a soup recipe that my friend gave to me and then I LOST it. She made the soup and everyone in my family liked it, especially DH. Grrr ... anyway, anyone have a recipe for a soup that has ground beef, slices of sausage, and lots of veggies? I think green beans, peas, carrots ... I want to make it later this week. TIA!
