I baked a ham on Tuesday and have been making different meals with the leftovers. Wednesday was ham and potato soup, and last night was chicken cordon bleu casserole (I'll post the recipe, it's delish!). Tonight will be leftovers and tomorrow I'm making black eyed peas with the ham bones and some of the meat...yum!!

Just made for breakfast and two of of 3 kids liked (both 3-year-old twins - not 7-year-old) and husband loved it; From www.eggbeaters.com website; Florentine Strata - Ingredients: Pam Original No-Stick Cooking Spray; 1 carton (15 oz. size) Egg Beaters Florentine; 1/4 cup low fat (1% milk) 3 cups French Bread Cubes (I Bought Cub Bakery Brand with two small fresh loaves in package but one would have been fine - 3/4 inch cubes - I left crust on); 1/2 cup shredded Swiss Cheese; Divided; 1/8 tsp black pepper; 1/2 cup chopped yellow onion (I used sweet yellow onion; 1 pkg (6 oz) baby spinach leaves, chopped coarsely (this looks like it will be a lot of spinach but it isn't after you chop and wilt it during cooking; 1 can (14.5 oz) Hunt's Diced Tomatoes with Basic, Garlic and Oregano, drained well (put this in a mesh strainer and pushed down on it to drain it really well as was afraid it would be too much liquid to dish and then take forever to cook); Directions: 1. Preheat oven to 375 Degrees; Spray 8X8 inch glass baking dish with cooking spray and a large skillet with cooking spray (I used vegetable oil in skillet as my main skillet was non-stick and the spray ruins the non-stick coating in the pan); Combine Egg Beaters, milk, bread, 1/4 cup cheese, and pepper in a large bowl. Toss until bread is coated well; 2. Heat skillet over medium-high heat; Add Onion, cook 4 minutes until lightly browned, stirring occasionally; Added spinach; cook and stir until wilted; Add spinach mixture to Egg Beaters mixture; Stir to combine; Gently stir in drained tomatoes until combined; Place mixture in dish; Top with remaining 1/4 cup cheese; 3. Bake 40 minutes or until knife inserted in center comes out clean; Remove from oven; let stand 5 minutes. I read this recipe too fast as was making it so added full 1/2 cup of shredded Swiss cheese into recipe and then covered with 1/4 cup on top of it; It was wetter because of two much cheese, so cooked it an additional 15 minutes before came out with knife inserted comes out dry; Husband loved it; Can tell that it would be great for work lunches with reheating. Makes small 8X8 pan so don't plan on serving to large crowd for breakfast but our family of 5 had more than enough and some left over for lunch or dinner tonight. If you have electric stove with even heating through it -- it probably would be done in 40-45 minutes. I have gas oven which is pain in butt as heating is no so even so all my recipes take longer than whatever directions say to get done. Also making a Crock Pot Stew with dumplings for tonight/tomorrow (if snowed in) -- If it turns out to be any good --I will also post on here later.

Slow Cooker Chicken & Dumplings from www.campbellskitchen.comMade this today for dinner tonight; Was requested by entire family and elderly aunt to make again. Ingredients: 1 1/2 lbs. boneless chicken breast halves cut into 1 inch pieces (it said approximately 6 in recipe - I had giant ones and 3 came out to that weight on a scale); 2 medium Yukon Gold potatoes, cut into 1 inch pieces (about 2 cups; I used Green Giant Klondike Golden as that is bag of potatoes I had and cut up enough to be 2 cups leaving skin on; The Klondike Gold hold their shape and don't turn to mush in crock-pot by the way - Maybe Yukon Gold do too?); 2 cups baby carrots; 2 stalks celery, slices (about 1 cup); 2 cans (10 3/4 ounces each) Campbell's Condensed Cream of Chicken Soup (Regular or 98 % fat Free; I substituted 1 Campbell's Healthy Request can and one Campbell's 98 % Fat Free to lower the sodium content in whole dish); 1 cup water; 1 tsp. dried thyme leaves, crushed (not ground thyme); 1/4 tsp. ground black pepper; 2 cups biscuit baking mix (I used Heart Smart Bisquick Light - the white box vs. yellow regular box); 2/3 cups milk (1%) Directions: 1. Stir the chicken, potatoes, carrots, and celery in a 6 quart slow cooker; 2. Stir the soup, water, thyme, and pepper in a medium bowl. Pour the soup mixture over the chicken and mix through; 3. Cover and cook on LOW for 7-8 hours or until the chicken is cooked through; 4. Stir the baking mix and milk in a medium bowl; Drop the batter by large spoonfuls into the crock pot in the cooking chicken vegetable mixture. Vent the lid and cook for 30 minutes until the dumplings are cooked in the center (I vented by using a one wooden chopstick to prop up just one side of lid to vent it; Doing this helps to prevent the dumplings from getting gummy; I did dumplings for 45 total with venting and then cover off and crock-pot on warm for another 5 or so minutes). I fed 3 adults and 3 kids (7 year old girl and 3-year-old twin boys with this recipe and still had enough leftovers for lunch with a side salad tomorrow and/or orange slices for kids. I also served with one slice of crusty french bread in case the kids didn't like the dumplings. But they did. I would recommend this to anyone. It is easy-peasy. I just put it together so it started cooking at 9:30 AM and cooked it until 5:00 PM (7.5 hours) and then made the dumpling mixture and vented the lid for the 45 minutes or so as was waiting for Great Aunt to come over to eat. She liked it too. She is in her 80's and doesn't like boring, flavorless, steamed-to-death crock-pot food.

Progresso Recipe Starters Fire Roasted Tomato with chicken. Was okay. Used up frozen boneless chicken breasts and 1/2 pkg of spagetti I needed to use.

I have the rice cooker set on a timer so when DH gets home it'll be waiting for him and the kids. I asked him to pick up a rotisserie chicken if possible, and we'll just have that with a veggie and fruit. I normally do crock pot meals on Mondays but didn't get my act together to have a recipe and ingredients ready to go.
