Creamy Pesto Pasta (wth shrimp or crab)
1 pound pasta 1/2 cup butter 2 cups cream 1 cup parmesan cheese, shredded 1/3 cup pesto sauce 1 pound shrimp or crab meat, cooked
Cook the pasta per box directions and drain. Meanwhile, melt the butter in a large, deep skillet over medium heat. Add the cream and heat, stirring continuously, for 6-8 minutes. Add the parmesan and stir until blended. Add the pesto and stir. Add the shrimp or crab meat and stir until heated through. Serve over pasta.
I like to serve it with a big salad and some crusty bread. If I have cooked quinoa in the house I'll add some to my pasta dish to make it slightly healthier.

Some of each--I try to make pesto in the summer while my basil plant is going gangbusters. At the moment my kids really like the "Knorr" packets of pesto so I've been buying those -- you just add water and olive oil and simmer for 5 minutes. It's a bit runny for my taste but it's dairy free and my oldest has a dairy allergy so it's become a staple+.
