I am so into making homemade granola bars. Fun, easy to make. So far I have made them w/ ch. chips, raisins, craisins. I got the recipe from the Better Homes and Gardens cookbook. Yummy! I will try to post the recipe soon. Personally I think they are a little tastier than the store bought kind(s).
I posted the recipe below.

Here is a recipe I got so I can make DD2's nut free: 3 cups quick cooking oats 1 can sweetened condensed milk 2 tbs melted butter 1 cup flaked coconut 1 cup sliced almonds 1 cup mini chocolate chips 1/2 cup craisins
Preheat oven 350 Grease 9*13 pan Mix oats, coconut, almonds, cranberries, chocolate chips Add condensed milk and melted butter, mix Press flat in pan Bake for 20-25 min or until lightly browned around the edges for chewy bars Allow to cool completely
Some notes/tips: Make sure you get QUICK cooking oats, otherwise the oats won't get cooked enough before the condensed milk starts to brown. Line your pan with parchment. The condensed milk may cook to the bottom. I just omitted the nuts-I didn't add anything extra, they were just a little thinner and browned quicker. The recipe is super easy and flexible- just add and take away what you want. Make sure your butter has cooled a little before adding it in, otherwise your chips my melt a bit. They were a little bit too rich for me, the next time I made them I only put half the chocolate chips in.

Here is the recipe...
Granola bars
1 c. granola 1 c. quick cooking oats 1 c. chopped nuts (I leave those out since we have one w/ a nut allergy in our house) 1/2 c flour 1/2 c. raisins or other mixed dried fruit bits 1 beaten egg 1/3 c. honey 1/3 c. cooking oil 1/4 packed brown sugar 1/2 tsp. ground cinnamon 1/2 tsp. nutmeg (I add that)
1. Line bread pans w/ wax paper. Grease the foil, set pan aside. In a large mixing bowl combine granola, oats, nuts, flour, raisins. Stir in egg, honey, oil, brown sugar, and if desired cinnamon. Press evenly into the prepared pan.
2. Bake in a 325 oven for 30-35 minutes or until lightly browned around the edges. Cool on a wire rack. Use the paper to remove from the pan. Cut into bars w/ a sharp knife. It says it makes 24 bars.
I made them 2 days ago and they are nearly gone already. I have made them maybe 5 different times already. I don't buy the store bought ones very often anymore.
