I'm not sure how long it's going to last, but for now I seem to be a vegetarian. I'm wondering if other vegetarian moms have families that eat meat and if so, do you have any tips on managing that.
Tonight I cooked meat for the first time in about a month, and it was fine. It didn't bother me to cook it - it just didn't appeal to me to eat it. I made quinoa and chickpeas, so there were several protein options on the table. I had both of those along with eggplant and beets. My son ate chickpeas and baby carrots and my wife had chicken, quinoa and baby carrots. Everyone was happy.
I already tend to make a variety of side dishes as I like a wide variety of veggies and my wife and son both eat very few. So I'm guessing I'll just end up making at least 2 proteins - at least for now - too. Most of the time anyway - there are a couple of vegetarian meals we all eat.

I was vegetarian for a long time and now only eat poultry and fish/seafood. We make a lot of "easy" things for meals instead of big meals since we all like different things. DH rarely eats red meat at home since I don't like to prepare it (just don't care for the smell), we do a lot of chicken or a big salad and I'll have a black bean burger cut up on it and DH and DS will do chicken.
I became vegetarian at 14 so what my mom and dad would do when preparing food is leave a section of casserole w/o meat (or put a little in a small baking dish before meat was added), or leave meat out and have as an "add-in" for others. Example make chili with beans and leave the ground beef out and those who want can add it to their chili.
One of my favorite vegetarian recipes is mexican lasagna (everyone likes it):
1 can corn (drained) 1 can diced tomatoes (1/2 drained) 16 oz salsa 1 can kidney beans (drained & rinsed) 1 can black beans (drained & rinsed) 1 green pepper diced mix above in saucepan with 1 tsp cumin and 1/2 tsp cinnamon. Bring to boil and then simmer for 3 min
In 13x9 pan (greased) layer soft tortilla shells, then 1/2 the above mix, 1 cup shredded monterey/cheddar cheese. Repeat layers bake at 350 for 25-30 min.
I often serve w/ cornbread and salad.

My wife won't eat beans. So as it was when I made chili I would cook the beans separately and add them to my bowl. So now I'll just make two chilis. Actually I was thinking vegetarian chili could be a great option because I could warm up a bowl just for me and just eat that and veggies.
Love the salad idea. We do salad bar, noodle bar, and potato bar sometimes anyway. So those are easy ways to please everyone.
The mexican lasagna sounds great to me, but I'm the only one would eat it. My family doesn't really eat casseroles for the most part. My wife will eat a few if they have very limited ingredients. My son won't eat any type of casserole.

hmmm....not eating beans makes it difficult. I have some other recipes I really like that they might eat too, I will look them up and post them for you later.

My husband was vegan for a year and I got good at cooking a few different dishes. All the main dishes you can just add meat to it. Vegetarian is easier then vegan!! I have friend who swears by the fake meat. Do you like wild rice? I found this recipe to make wild rice burgers and they are so good!!! I have thought of giving up meat, but the only thing I like in the summer is a hamburger or brat on the grill! I think I could give up all other meat!!

And that reminds me, we all love my fried rice and I could just stir fry some chicken separately or just keep the whole meal vegetarian.
Yes, vegetarian is DEFINITELY easier than Vegan.

Tonight's dinner worked well. There was some cooked turkey in the freezer and Tina wanted Turkey noodle casserole (we hardly ever have casserole, but that's one she likes). So made the noodles, used most of them to make her casserole and then made salmon noodle salad for myself with most of the rest, saving a small amount as plain for Ian. I roasted asparagus while her casserole cooked, and put out cold fruits, veggies and nuts.

Here is a recipe I follow and have tweaked a little bit. The recipe is from Fitgers up in Duluth. I have used all kinds of cheese and other seasonings. These are very yummy leftover as well!! Hope you enjoy it!! Sorry I haven't been on in awhile.
1 c (8 oz) Minnesota hand-harvested, wood-parched wild rice, uncooked 3 c low-sodium vegetable stock, homemade preferred (making vegetable stock is another fantastic way to use up some of your CSA’s or garden’s bounty)
Patties 3 extra large eggs, whisked 2 rounded tsp Jax Seasoning or other all-purpose seasoning (Jax’s, available at Lunds, includes salt, onion, garlic, paprika, sugar, black pepper, curry powder, and turmeric) 1 tbsp pure olive oil, Canola oil, or other neutral oil 1 c grated sharp cheddar cheese 1 c (3 oz) crushed saltine soda crackers (we used Late July Organic Classic Saltine Crackers, available at Mississippi Market Natural Foods Co-op)
8 slices sharp cheddar cheese oil to brush on the griddle
Burgers 8 multi-grain hamburger buns, split garlic mayonnaise (we used Delouis Fils, available at Coastal Seafoods, but it’s easy to make your own) alfalfa sprouts roma tomatoes, sliced red onions, sliced
The night before, prepare the wild rice according to the instructions on the box, substituting the vegetable stock for the water. Cool in the refrigerator overnight. When you’re ready for burgers, prepare the buns and burger toppings. Split the buns, spread a layer of garlic mayonnaise on the top half of the bun, then place a pinch or two of sprouts and two slices of tomato on top of the garlic mayonnaise. Lay out the bottoms of the buns on a serving tray. Make the patties. In a large bowl, whisk together the 3 eggs, Jax Seasoning, and olive oil. With a rubber spatula, mix in the cheddar cheese until combined. Mix in the cooked and cooled wild rice, then the crushed crackers. Scoop out a ½ cup of the wild rice mixture, form it into a patty, and place it on a cookie sheet lined with parchment paper. The patties are very crumbly and delicate at this stage. Repeat for remaining 7 patties. Brush a cast-iron griddle with oil, then heat to medium. Using a pancake turner, carefully place each patty on the griddle and cook for 3 minutes. Turn each patty carefully with the pancake turner. Cover each patty with a slice of cheddar cheese, then cover with a lid (or close the cover of the grill) to melt the cheese. Cook for another 3 minutes. Remove patties from heat and slide each on the bottom half of the whole grain bun.

Ian announced on Tuesday that he is a vegetarian too. He has said that before but it never lasted more than one meal before. Now we are on day 3, including 2 meals out and he has been careful to ask what is in things, and ask for help figuring out the non-meat items on menus. He has verbalized that he doesn't want to hurt animals and that is why. I still sort of think he'll just want a hamburger at some point too much to stick with it, but I guess we'll see. This is definitely the longest he has gone and the most serious he has been about it.
Anyone have vegetarian kids? Tips? Ideas? favorite meals?
It's really just dinner that's a change since we aren't meat eaters at breakfast anyway, and he has always needed vegetarian lunches for school. Well for lunch brought from home. It will be interesting because when he has bought hot lunch it has sometimes been meat ones, and this will limit his hot lunch choices a lot (they do vegetarian on Tuesdays and Thursdays I think).

We aren't vegetarian but I happen to eat a lot of vegetarian meals, just by choice/preference. Some of my favorite vegetarian meals include:
rice noodles with peanut sauce and stir-fried veggies egg fried rice (I mix in some quinoa too for extra protein) slow cooker vegetable barley soup cheesy vegetable chowder
I'll post some in the recipe section if they're not already there.
