I made this yesterday. B/c I let my ds pick what he wanted for his b-day and he requested chx nuggets.
Healthy Chx Nuggets:
Ingredients: 1 1/2 lbs. boneless chx thighs or breasts 1 c. cornflakes cereal 1 tsp. paprika 1/2 Italian herb seasoning 1/4 tsp. garlic powder 1/4 tsp. onion powder
Directions: 1. Remove skin and bone. Cut thighs into bite size pieces 2. Place cornflakes in plastic bag and crush by using a rolling pin. 3. Add remaining ingredients to crushed cornflakes. Close bag tightly and shake until blended. 4. Add a few chx. pieces at a time to crumb mixture. Shake to coat evenly.
Convential Method: 1. Preheat oven to 400 degrees F. Lightly grease cooking sheet or put parchment paper on it. 2. Place chx pieces on cooking sheet so they are not touching. 3. Bake until golden brown about 12-14 minutes.
Note: You might need to put the chx in a beaten eg so the cornflake mixture stays on the chx.
It was so good. Everyone liked it.

So much healthier than those store bought packages. This meal though took forever to make, but so good.

Id probably cut the chicken up ahead of time and marinate in something yummy.. then add the cornflakes ..then bake

Good idea Sarah. I didn't think of that. Plus when I bought the chicken earlier in the week I forgot and put it in the freezer, I bought one of the family size packs.

if only i were willing to cut or even touch raw chicken I do make this same recipe only full breast size of course :-)

is it the texture of the meat when you touch it? Have you tried using latex gloves? I used to do that because I hate working with raw chickn too...

tried these the other night and hubby loved them... I was going to use lowfat buttermilk as my liquid base, but it expired before I could use it, so I used an eggwash.. and I put them in for 18 minutes and that was perfect for a crisy crunch...
I mixed up the seasonings a little... did use paprika, but I used garlic salt and onion salt... and mrs dash unsalted seasoning

and I used chicken breasts instead of thighs... I hate the thigh meat!
