I talked about it in a different post about my son having his first comunion soon well I am trying to figure out what to serve. I want to make something where I can make most of it ahead of time and have it maybe in a crockpot while we are at the first communion service. Note this is happening first weekend in May.
Anyone have any ideas for me?

What about chili? You could have cornbread and salad with it. Optional toppings - shredded cheddar, avocado, sour cream, chopped scallions.

That's an idea. I am almost thinking of sloppy joes. Or bbq pork (shredded pork sandwiches).

Those sound messy. Are people sitting at a table? Personally I wouldn't do something that messy if people are possibly eating off their laps. But if there is table space for everyone, then those make sense.

We will do buffet style then yes ppl will sit at tables. We have 2 tables that expand when we have comapny over.

meatballs or bbq weenies go well in the crockpot... baked potato bar... you can cook those, then have cheese, chili, bacon bits, sour cream, butter etc for people to put on top.

Would you be interested in serving seafood? Paella is always fun but takes time to make it You could do smoked salmon or grilled salmon or stuffed salmon as a whole fish with different sides. Shrimp with dips. I also like French lentils with vegetables like different bell peppers (the sauce is very simple: honey, balsamic vinegar and olive oil) or quinoa salad with mangos, etc...

I was just to a baptism dinner today. We had pulled chicken and cheesy tater tots both in crockpots. There was also a taco salad, broccoli salad and pickles. It was all ready when we got to the house after church.

My mom has a great turkey bbq recipe that you can make ahead of time and freeze and then thaw and have in crockpot. Basically you roast a turkey with vegetables stuffed inside and then cut up the meat and puree the vegetables in a blender and mix together with water. If you want the recipe let me know and I can type it up.

A baked potato bar! You can keep the potatoes warm in crock pots and then just set out the various toppings

How fancy or casual do you want to be? You could get some of those smaller buns (dollar buns) and do mini sandwiches-pulled pork, beef or chicken. You could also just do a tray of deli meat that people self assemble. Pasta salad or potato salad, fruit salad, veggie tray, some cheese and crackers or chips, and of course cake. Since its a special day for your child is there something they would really like to have at the meal?

He loves chicken wings w/ bbq sauce. He is ok w/ spice.
