I need to bring a salad to a funeral

One of our favorite neighbors died..I told his daughter I would bring bars and a salad to the lunch after the funeral. I have pretty many dessert recipes, but I don't do many salads.

Any ideas?

Easy pasta salad-- medium shells, pesto, cherry tomoatoes, feta cheese and cubed cooked chicken--
Not crazy about feta, but it really adds flavor in this and is not overwhelming

I agree pasta salad. The one I like is easy:

Garden Rotini
Carrots
Pepperoni
Shredded Cheese
Red & Orange Peppers (if in season)
Broccoli (sometimes)
Italian Dressing right before serving to taste.

another pasta salad:
ring pasta
hardboiled eggs chopped
onion
can of tuna
small can of peas
Miracle whip thinned a bit with milk
salt and pepper

one can of crushed pineapple (use juice and all)
one package of pistachio pudding
one container of cool whip
one bag of mini marshmallows
mix... done

How about a Seven Layer Salad? I really like them and have had them at funeral meals.


7 LAYER SALAD

1 head lettuce, chopped
1 layer red onions
1 layer cauliflower
1 layer carrots, grated
1 layer cheese, grated
1 layer bacon, grated
1 c. salad dressing

Layer each ingredient in dish. Spread salad dressing over top. Cover. Refrigerate overnight.

Japanese coleslaw. Sooooooo good.
