The last couple of years we've planted a small little plot of veggies -- I'm hoping that if my kids are served some food that they planted and saw growing, they'll be more likely to eat it. (Fingers crossed!!)

That's a good point, too, Jennifer.
Renee, I think I may have to try your system. Meals are so difficult in our home because during the week it is just my two sons and I. They, too, are very picky, so I generally just cook what they like and eat cereal or something. On the weekends, DH is home and we cook big so that he has leftovers for the rest of the week. Meal planning probably would be beneficial for me financially.

My other little strategy is looking at my week ahead and noting the totally crazy, not-home-running-around days and planning to do either a crock pot meal or making a bigger meal the day before so that we have leftovers. That'll save us from resorting to a "running to McDs" or "frozen pizza" night.

Hello Ladies! I also do meal planning and shop once I decide what I will be making. I think we save a lot of money this way.

We had such a great weekend! Went to Blaine airshow and DD got to fly in a helicopter. Then, after church went to see the Grand Ol' Day parade. Lot's of fun. I think she finally realized how to get free candy

My kids are not too picky but they have their preferences. I make a lot of grains and beans. My DD does not care much for meat but will eat prosciutto, so I make stuff wrapped in prosciutto.

they also love soups. I puree them at times if it has spinach or kale.

Hey Cyndy, Here are a few of my kiddos' favorites. If you want any recipes, let me know and I'll post them tonight when I get home.
1) Lettuce wraps. My 4YO loves them. The 7YO won't eat them, but I serve it with rice, fruit, and edamame, which they'll both eat and the 7 YO can make a meal out of. 2) Red beans and rice, corn bread, fruit 3) Crockpot chicken chili (I know the recipe's on this site) with fruit 4) Crockpot meat loaf -- my 7YO loves it but not the 4YO so I'll do baked potatoes, broccoli, fruit that the 4YO will like. 5) Kale-sausage pasta. I'll make it and gives the kids pasta with just sausage, no kale. 6) Stovetop chicken barbecue. I serve it over egg noodles and have veggies and fruit on the side. 7) Tortillas. The kids will put just meat on theirs (usually shredded chicken) but my DH and I like all the fixings.

Thanks for the ideas, gals! I think I may try this during the summer and if I get good at it can continue on during the school year. Renee, I would love your crockpot meatloaf and kale-sausage pasta recipes. They sound tasty!

I see that I did post the crock pot meatloaf a while back, so that's on there already (look under recipes and the category crockpot). Yay! And I found the kale-sausage pasta recipe on line so I'll post that soon.

My 6 yr old takes leftovers for lunch at school, sometimes I have to keep extras just for him.

Happy to help! I love to eat and on non-crazy days, I love to cook. So it's fun for me to share some of my favorites -- especially those "rare finds" that my kids will actually eat too!
