Peanut Sauce
1 cup creamy peanut butter ½ cup sugar ½ cup white vinegar ¼ cup soy sauce ¼ cup sesame oil ½ Tblspn chopped garlic ½ Tblspn chopped cilantro ¼ cup cold water ¼ cup Thai sweet chili sauce ¼ cup chopped peanuts
strir-fried vegetables of your choice (we do carrots, broccoli, mushrooms, onions, water chestnuts, bell peppers) Thai rice noodles, cooked
In a large mixing bowl, combine all of the ingredients and mix or whisk until creamy. (There's no need to cook it.) Toss with Thai rice noodles and vegetables and serve.

This sounds awesome and my very non-vegetarian wife would eat it as well. If she's nice I'll even cook her some chicken she can put it over

This one tends to be a crowd favorite -- I've made it for friends before and it goes over well. If a person likes peanut butter, they'll like this!

What else could you use the sauce with? Not a big veggie fan here... but sounds yummy

It would be great on noodles. Or chicken. Or as a dip for spring rolls I would bet.

It's good on rice noodles, chicken, quinoa ... the recipe makes quite a bit so if you're going to use it as a dipping sauce you'll probably want to halve it.

Raw spring rolls are super fun and easy. Sometimes we do them as sort of a "bar" so everyone fills them with what they want.
