Cindy Voyen’s Cheese Vegetable Chowder
¼ cup margarine or butter 2 cup chopped cabbage 1 cup sliced onions 1 cup diced celery 1 cup thinly-sliced carrots 10 oz frozen peas* 2 cup frozen whole-kernel corn* 1 ½ c. milk 1 teaspoon salt ½ teaspoon pepper ½ teaspoon thyme leaves 10 oz (2 ½ cups) shredded processed cheese
In a Dutch oven or large saucepan, melt margarine. Add cabbage, onions, celery, carrots, and peas. Saute 8-10 minutes until crisp-tender. Add corn, milk, salt, pepper, and thyme. Reduce heat and simmer 20 minutes, stirring occasionally. Add cheese and stir until melted.
*(The “tester” recommended using half of the package of peas and only 1 cup corn)

Interesting. I would use cheddar rather than processed cheese (not sure what that is) and my family might eat it.
