Egg Fried Rice
1 ½ cup rice Onion, diced Garlic, minced Broccoli, chopped Carrots, chopped Mushrooms, sliced Water Chestnuts, sliced Bell Peppers, chopped frozen peas (about 1/2 cup) 5 eggs milk/milk substitute sugar salt
Make rice per package instructions. Meanwhile, stir-fry the vegetables. When they’re cooked, stir in the frozen peas and set aside. Whisk the eggs with a little milk, some sugar, and salt to taste. Scramble the eggs. When the rice is done, let it sit for 10 minutes and fluff. Then mix rice into the vegetables and stir in the scrambled eggs.

I do make a really good fried rice and my family does love it. I will have to do that soon! Thanks for the reminder!
