6 cups baked potatoes, peeled and cubed 3 stalks celery 1 cup chopped onion 3 (14.5 oz) cans chicken broth 4 cups half-and-half 6 tablespoons butter, melted 6 tablespoons all-purpose flour 4 cubes chicken bouillon 1/2 teaspoon ground black pepper 1/2 pound bacon (cooked and crumbled) 1 clove minced garlic 1 teaspoon dried basil Sautee onion, celery, and garlic together until tender. Stir in 1/2 the flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil. In bowl, combine half-and-half, remaining flour, bouillon, and melted butter. Stir mixture and combine over medium heat. Stir until thickened. I like to take 1 or 2 of the potatoes and mash them. Add them to the soup mixture and stir until well mixed. Then add remaining cubed potatoes. Cook over low heat until thickened and ready to eat! Use bacon to garnish. I hope I remembered everything....I mix together two recipes and use them as a guide.

Can you boil the potatoes and still have same taste.... probably huh?

Enjoy! Just so you know, I add my own spices to taste, just like any recipe. So don't be afraid to taste as you go and add your special spices! I made this on Saturday and just tossed everything in the crockpot. I did have to use a little corn starch to thicken it to our liking, but it was TASTY!
