Cake Mix Cut-Out Cookies Prep Time: 2 hours, 10 minutes Cook Time: 10 minutes Yield: 3 dozen From Gooseberry Patch's Christmas Cookie Jar Ingredients 1 Box Cake Mix 2 Eggs 1 Stick Slightly Softened Butter (Not Margarine or Light Butter) 1 t Vanilla Save Now Instructions Mix ingredients well. Chill dough for 2 hours (Edited to add: Freeze for one of those hours for best results). Roll out on floured surface and cut with cookie cutters. Decorate as desired. Bake at 350 degrees for 12-15 minutes on a greased/lined cookie sheet These were sooooooooo yummy! The girls had fun cutting them out too! These sound good! What flavor cake mix did you use? Could you try chocolate, for example? Are they hard enough to frost afterwards (versus decorating them before you bake them)? My kids want to do roll out cookies but they're such a pain in the butt I've been reluctant to try it, but these ones sound tasty.

I used yellow cake mix! I am not sure how chocolate cake mix would taste, wouldn't hurt to experiment! We just frosted them as we ate them and they were hard enough yet soft. It was easy to roll out too! After you mix the dough put it in the freezer for about an hour then the fridge for about and hour and roll out on flour cover table (I taped wax paper down easier clean up!) as long as dough is cover in a dust of flour rolling it out was easy!

Interesting. Wonder if you could do almond flavoring instead? I don't use vanilla in my cut out cookies, the almond makes them taste sooooo much better.
