Manhattan Clam Chowder
5 (6.5 ounce) cans minced clams, drained 1 large potato, diced 1 onion, chopped 1/2 teaspoon salt 1 pinch ground white pepper 4 slices bacon 1 large carrot, grated 8 ounces tomato sauce 2 tomatoes, chopped 1 stalk celery, chopped 2 cups water
Dice bacon, cook in large saucepan with onion and celery until crisp and onion golden. Pour off most of fat. Add 2 cups water, potatoes, carrots, salt, pepper, thawed tomatoes, and clam juice from cans. Simmer 1 hour. Add tomato sauce and clams. Simmer 15-20 minutes or until just boiling.

Yes, it's become a regular on the family recipe rotation. I add extra veggies to bulk it up a bit, and sometimes I skip the bacon. But my DH is a big fan. Kids not so much ... so I make sure I have other side dishes that they can make a meal out of.
