2 chicken breasts 1 can of corn (undrained) 1 can of black beans (drained and rinsed) 1 can of Rotel (undrained) 1 pkg ranch dry seasoning 1 tsp cumin 1 tsp onion powder 1 tbsp chili powder 1 8oz pkg cream cheese
Place the chicken breasts in the crock pot, top with corn, black beans, Rotel and seasonings. Mix well. Top with the cream cheese. Cook on low for 6-8 hrs. Shred chicken with 2 forks and stir everything together well.
I served it over basmati rice, but it would be really good with tortilla chips, or even on it's own! Next time I'm gonna bake some potatoes and use it as a topping.

Gonna get up early and put this together in crock pot tomorrow morning so is ready for late lunch. Looking forward to it over brown rice/quinoa mixture or potatoes; Don't have any tortilla chips but would think that would be really good.

IMO there isn't really a need to serve it over anything! Maybe because I doubled the chicken so it was really meaty.

Working from home and put this together with the 4 chicken breasts so maybe won't do the stuff to put it over. Thanks for the heads up. I'll let you know what Tornadoe Boys Twins think. They are sometimes really picky, somtimes not. Husband will eat anything (as long as it's not road kill - his exact words to me many times) and daughter will usually eat anything. And I'm like, if it's done and heavy on protein versus carbs, I'll eat it. Although I have to get a little bit better about the lower carbs than I have been lately. I am so looking forward to a new recipe that isn't super involved. So thanks for posting this.

Both boys (age 3) liked it and asked for seconds; Daughter thought it was okay; Husband said he'd eat it anytime as many times as I wanted to make it; I did put it over brown rice quinoa mixture for everyone and served with orange slices on the side for a fruit; I thought it was pretty good for no work involved; I didn't know what you meant by the Ranch Seasoning packet so I bought one of those Hidden Valley Ranch Dip seasoning powder packets; There is Ranch Dressing Packet too; I also used 4 regular size chix breasts and 1 small one as had a family pack to use up; Also used Rotel (Mild) versus Medium or Hot; Did it for 7 hours on low in crock pot; If I did it again, I'd do it for 6 and use 4 chix breasts only -- as I think it would be a little more liquidy if I did it less time with a little less meat. Next time I'm going to make it, regular canned sweet corn or possibly Golden Hominy in it and a Rotel Medium if my kids are not around to eat it. Loved it for simplicity and for how adjustable it appears to be. Definitely could see just eating it plain with not having to put it over rice or anything. Could be a Football Game watching meal with baked scoop chips to eat it up.
