Asparagus with blood oranges always looks beautiful and is simple and delicious.
In a baking dish place asparagus, alternating ends. Pour a small coating of orange juice into the pan. Slice a blood orange or two and arrange the slices on top of the asparagus, letting the tips show. Roast for 15-20 minutes at 400 degrees.

Roasted tomatoes -
Place grape tomatoes in a small baking dish. Drizzle with a bit of oil and place sliced garlic throughout. Roast at 400 degrees for 45-60 minutes, until the tomatoes pop open and simmer and then are done to your satisfaction. I like it when they get bits of black.

Sautee some garlic and onion, then add a bunch of kale leaves and a little broth. Cover and let the kale steam. Then add chili powder, cumin, a dash of red pepper to taste. Top with some chopped walnuts and Craisins. Delish!!

Red potatoes cut into halves or cubed coated with a little olive oil, italian seasoning packet, and shredded parm. Once I get on the computer I will edit with instructions on baking!

jrose, I love those red potatoes.. they are the closest thing MN has to NYs salt potatoes... I love olive oil, italian seasoning and parmesean romano cheese on them. I boil them then cut in half.. drizzle, sprinkle eat In NY we dip them in melted butter not healthy but very yummy

Lemon, Honey carrots. Just layer carrots in a baking dish add some honey, lemon and butter and either bake or microwave. They are yummy!

speaking of carrots.. I was just going to add that we do baby carrots... cooked with a little big of butter and brown sugar!! YUM!

Wow you all do a much better job of being creative than I do.
We do a lot of salad, baby carrots, steamed green beans or steamed broccoli. That's it. No spices, sauces, etc. Super boring.

I cook them till the desired crunchyness. I just stab them with a fork till they feel right then eat them.

Mmmm these all sound great. I have done the italian seasoning on steamed green beans before. Delish!
I do carrots in a skillet with a little butter, a good drizzle of honey, a little water and lots of thyme. Saute until the water cooks away. Super sweet and good!

Curry Cauliflower -
Put cauliflower in a baking dish with a cup or so of broth with lots of curry powder mixed in. Roast at 375 or 400 until desired tenderness, about 20-30 minutes. Toss or baste frequently.

Zesty Italian Potatoes! Red potatoes cubed with skin left on, drizzle with extra virgin olive oil, coat with a package of zesty Italian dressing mix and stir to coat, add minced onion for flavor, salt and pepper to taste.
