Do any of you have "healthy" recipes for waffles or pancakes? My family has a Sunday morning tradition of making one or the other, which we love. However, I was listening to the radio this morning and these dieticians were talking about how they are not good breakfast choices. Apparently when your body digests the refined flour, your blood sugar spikes and then plummets so you feel tired.
ANYWAY -- since I don't want to give up our fun Sunday breakfast routine I need to find some good recipes that add nutritional value to our waffles and pancakes. So if you have good suggestions I'd love to hear them! I googled some recipes, but I would love to hear from you ladies too. Thanks!

I do add some whole wheat flour when it's my week to be in charge of breakfast (DH and I trade) but I don't know if that's really doing a whole lot. :/

I will post the whole wheat recipes I use. You can't even tell the difference IMO. I also had a friend make pancakes with Greek yogurt, I post that recipe too,
