I'm looking for a good chicken quesadilla recipe. We really like them around our house and in general I think they're pretty easy to make. But for some reason ours just seem so bland. I season the chicken, but that doesn't seem to do much....

DH loves these....not exactly healthy but....
1 pkg of boneless breasts (about 1 lbs) - cook Shredded mozzarella cheese Shredded cheddar cheese 1 can cream of chicken soup 8 oz sour cream 10 soft shell tortillas
Heat oven to 350 Cook the chicken, at the same time make the cream of chicken soup (use 1 can of milk to mix), add in the sour cream to the the cream of chicken soup and mix in. Then add in about 1/2 cup shredded cheddar to cream of chicken soup
Put cooked chicken in middle of tortilla and sprinkle mozzarella cheese on top, roll up tortilla and put in greased 13x9 baking dish, continue until all tortillas are made. Pour the cream of chicken soup mixture over top. Bake for 25 min. Sprinkle cheddar cheese on top bake for 5 more min.
I like to put Salsa on top of mine when done.

i use the chicken fajita seasoning from mccormick and either shred or chop 3-4 chicken breasts... I add black olives and sometimes salsa and black beans
I heat a round skillet pan and spray with pam. I lay one soft tortilla down, add meat mix and cheese to half, fold it over and press with a spatula... when it's firm on the bottom, I just put the spatula under one side and flip it over.
They are always a big hit here... nothing fancy, but SO tasty!

I put a little taco season on the chicken. Use sharp cheddar (monterey jack cheese is delicious also) and I put pico de gallo in it....homemade or cubs has a really good pico!

I season my chicken with lowry's, garlic salt & pepper.
In addition to the chicken we add: monterey jack cheese, tomatoes, cilantro & taco sauce
Then we dip them in sour cream & salsa. They're really tasty and not bland at all!

This is the recipe I use. I love it: 1 1/4 pounds skinless, boneless chicken breast halves, cut into cubes 1 can (10 3/4 ounces) Campbell's® Condensed Cheddar Cheese Soup 1/2 cup Pace® Picante Sauce 10 flour tortillas (8-inch), warmed
How to Make It
1 Heat the oven to 425°F.
2 Cook the chicken in a 10-inch nonstick skillet over medium-high heat until well browned and cooked through, stirring often. Stir in the cheese soup and 1/2 cup picante sauce. Cook until the mixture is hot and bubbling.
3 Spread about 1/3 cup chicken mixture onto half of each tortilla to within 1/2 inch of the edge. Brush the edges of the tortillas with water. Fold the tortillas over the filling and press to seal. Place the filled tortillas onto 2 baking sheets.
4 Bake for 5 minutes or until the quesadillas are hot. Cut each quesadilla in half.

Full address below: www.ro-tel.comI made them Friday night. All kids and husband loved them. My kids like mild to medium spicy - so if you don't like spicy you will not like them. Ro*Tel Mexican Diced Tomotoes with Lime Juice & Cilantro can undrained (10 oz.) used. You could change this easily by varying which Rotel can you use and whatever cheese you want. You could also do lower carb using lower carb or wheat tortillas or smaller tortillas. You could also use smaller tortillas and then not have to cut into pie shaped wedges for small children like I did. Very easy and my first attempt at making quesadillas in a L-O-N-G time.
