Last night we had a cheese and pineapple pizza. You could do fettucini alfredo with broccoli, fried egg sandwiches, grilled cheese with tomato soup, broccoli cheese soup, fried rice.

I was thinking vegetarian dishes: stir fry veggies over rice with edamame on the side; Thai peanut sauce & veggies over rice noodles (I think I posted the recipe on the vegetarian recipes on this site); broccoli-cheese quiche; veggie sandwiches; bean soups. Good luck and have fun with it!

Also, quinoa is a grain but is also a protein. And you could use it as a rice substitute.

I like a lot of these ideas I will just have to play w/ some of these ideas, see what works and just try some out. Thanks for all the ideas.

So, is chicken not acceptable either? Just a heads up, if you are eating non-processed fish (such as any you caught yourself) you shouldn't have it more than once a month due to mercury concerns.

We always had a lot of the stuff above, and also my mom would sometimes was homemade apple fritters-- i think pancake mix, cut up apples, and then deep fried and ate with syrup. We did breakfast for supper, mac and chesse, fish, spaghetti with meatless sauce works for us now, cheese stuffed shells, veggie lasagna, etc
