I don't have a recipe but I bet you could pinterest it.... My mom used to make mini quiche in cupcake tins and add spinach and cheese.
I do not like it lol

This isn't really a recipe, but at the Lakeshore Grill in Macy's they have a very good sesame dressing they use on a their spinach salad. You can purchase it in Macy's Mareketplace. I'm not a huge fan of spinach but I love it with this dressing.
Other than that, first things that come to mind are quiche and veggie lasagna, etc.

I just made this pasta for the first time and DH and I LOVED it. I'll post it in the recipes board, too.
Creamy Chicken Florentine Pasta
1 pound(s) boneless skinless chicken breasts, cut into bite-size pieces 1/2 cup(s) halved red pepper strips 1 tub(s) (10-ounce) PHILADELPHIA Savory Garlic Cooking Creme ** 1 package(s) (6-ounce) baby spinach leaves 2 cup(s) hot cooked penne pasta 2 tablespoon(s) toasted Italian pine nuts
Cook chicken and peppers in large nonstick skillet on medium heat 5 to 6 minutes, or until chicken is done. Add cooking creme; cook and stir 3 minutes. Stir in spinach and pasta; top with nuts.
** This is a new product, so if your grocer doesn't carry it, you can do what I did which is use two cubes of Land O' Lakes "Sautee Express" Garlic & Herb and then add a little cream (I just eyeballed it, probably put in about a half cup?) until desired consistency.

I would have to look up the recipe (if I can remember where it was) for a cheesy spinach egg bake-- It had cottage cheese, eggs, shredded cheddar, frozen thawed drained (I prefer the fresh) spinach--no crust--yummy-- let me know and I could look it up-- with Lent I should find it anyway

I put spinach in everything from chicken salad to eggs to sloppy joes to soups. I always have a fresh bag handy. I don't think it has a ton of flavor (just lots of vitamins), so I mince it up and add it to tons of things.

We love this one!
Spinach Lasagna Rolls
Ingredients:
9 lasagna noodles, cooked 10 oz frozen chopped spinach, thawed and completely drained 15 oz fat free ricotta cheese (I like Polly-o) 1/2 cup grated Parmesan cheese 1 egg salt and fresh pepper 32 oz tomato sauce 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded
Directions:
Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
To serve, ladle a little sauce on the plate and top with lasagna roll.

Place the spinach, chicken, soup, and milk in a glass baking pan. Top with the cheese and bread crumbs. Dot with butter and bake at 350 degrees for 30-40 minutes.

I posted in "Breakfasts" a cheesy spinach egg bake that must be the same one Deanne mentioned above. I have to admit I have a selfish reason for posting these--that way if I'm away from home but want the recipe so I can buy the ingredients I can always hop on here and look at it!
