Cheesy Spinach Egg Bake
1 dozen eggs 1 package (11 oz) frozen spinach 32 oz low-fat cottage cheese 1/2 cup melted butter 1 pound sharp cheddar cheese, grated 1/4 cup flour 1/2 cup dried chopped onions 1 teaspoon seasoned salt (Lowry's) 1/4 cup parmesan cheese (topping)
Thaw and drain the spinach. Beat the eggs and stir in the spinach, cheddar cheese, onion, and butter. In a separate bowl mix the seasoning salt and flour into the cottage cheese. Add it to the egg mixture. Pour into a greased pan and back at 350 degrees for 55-60 minutes. Top with parmesan cheese. Let stand 5-10 minutes before serving.
