Hi everyone! I know I haven't been around much lately, things have been busier than ever around my house. School this summer is killing me since the teachers are basically cramming 16 weeks of homework into 4 Anyway, I decided that it's time to start eating clean. I've been struggling with weight loss and working out ever since I had DS (almost 6 years ago already! Where does the time go!?). I've yo-yo dieted and started working out only to give up a week or two later. So rather than starting another diet that I won't be able to stick to I'm trying to completely change my eating habits and hoping that soon enough it will become habit. For the first 30 days we'll be doing clean eating (no processed foods, only foods with ingredients that I can spell/pronounce . However, I'm running out of meal/snack ideas so I'm looking for help! I know a lot of you lovely mama's eat clean so if you have some quick tips or meal ideas I'd appreciate it! Right now we're eating 3 meals and 2 snacks a day. Just to give you an idea this is what I've followed so far this week: Monday: Oatmeal w/flax & wheat germ, greek yogurt w/ berries, vi shake, carrotts & hummus, grilled chicken & potatoes Tuesday: Greek yogurt w/ flax & wheat germ, 1/2 vi shake, wrap w/ hummus/turkey/avacado & feta, 1/2 apple with organic peanut butter, chicken chili Wednesday: Omelet w/ 2 eggs/onions/spinich/tomatoes & feta, 1/2 vi shake, wrap w/ banana & peanut butter, apple & almonds, chicken chili TIA!

My snack idea is edamame. For meals, stir-fried veggies over rice could be a good non-processed option. How about a baked potato bar with steamed broccoli or different veggies (I like salsa on mine)? I also make a faux-taco salad sometimes. I mix together rice, black beans, and salsa and warm that up and top it with whatever salad ingredients I have on hand--mixed greens, carrots, bell peppers, tomatoes, pea pods.
You can also use quinoa for a protein-starch. I use quinoa in lieu of rice. I've been told (but haven't tried yet) that for a breakfast recipe you make can quinoa per package directions but use fruit juice (instead of broth or water) and then add a little honey and slivered almonds or whatever you'd like to make a morning-style oatmeal.
If I have other ideas I'll post them.

What about hummus? If you have a food processor it's super easy to make and a great protein. We eat it with veggies for dipping, and sometimes whole grain bread or crackers as well.
Where do you like to shop? If you have a co-op near you there will be lots of great ideas there!

Yes, Sharon- I love hummus! I've had it as a daily snack with veggies. So tasty! I live in Blaine and I usually shop at Target (I like their produce better than Cub). I don't know of any close by co-ops but I'll have to look because I'm running out of ideas quickly
