I've been trying to 'eat clean' but since I have the worst sweet tooth on earth this can be hard.. My mom gave me this recipe she found online for No Bake Energy Bites and they are so good! I didn't add the chia seeds because I'm not sure what they are and I couldn't find them at Cub, but they were still delicious. I also used organic peanut butter. Ingredients 1 cup (dry) oatmeal (I used old-fashioned oats) 2/3 cup toasted coconut flakes 1/2 cup peanut butter 1/2 cup ground flaxseed or wheat germ 1/2 cup chocolate chips (optional) 1/3 cup honey or maple syrup 1 Tbsp. chia seeds (optional) 1 tsp. vanilla extract Method Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) I just made something very similar -
Ingredients
1 cup oats (use gluten-free oats if needed) 1/2 cup chunky peanut butter (non-oil at the top kinds) 1/2 cup unsweetened desiccated coconut 1/2 cup mini chocolate chips 1/3 cup honey 1/4 cup chia seeds 2 tablespoons vanilla protein powder (use gluten-free if needed) ¼ teaspoon cinnamon
Instructions
Mix all the ingredients together in a bowl until it looks like a evenly distributed uniformed dough. Roll the dough into twenty-four 1-1/2 inch balls. Refrigerate the bites for 30 minutes. Store in an airtight container in the refrigerator for up to a week.
They are chilling now, but based on how good my fingers tasted when I "cleaned" them off, I think it will be a win.
