I feel like I always get in a rut with cooking once the weather gets warm. I don't like to turn on my oven, and while we grill on the weekends sometimes, I find it to be too much time and work for a weekday. I do have a wonderful large cast iron grill pan that I do use, unless it's really oppressively hot and I just don't want to cook at all.
So - what are your favorite things to make your family that meet these specifications -
Healthy, organic, unprocessed Vegetarian and Carnivore options Can be cooked in a skillet or on a grill pan
I also have a rice cooker and crockpot which I should make more use of in the summer.

For the next several days I'm planning hot dogs/veggie dogs, sloppy joes two ways, homemade pan cooked fish sticks, grilled chicken optional salads. Grilled veggies of various sorts with everything.
Then I need a Vegan Shabbat, but that's a whole other deal.

I like making pasta salads in the summer.... and using my crockpot.
Have you checked pinterest for recipes? I bet you could find a lot there through the search option!

I think toasted bagels and organic PB with fresh fruit cut up and put on it (such as strawberries, blueberries, or blackberries in place of jam/jelly or honey, is a great lunch or breakfast with either coffee, in AM or cold glass of lemonade or iced tea for lunch is super easy, fast. Fresh sliced tomatoes with fresh sliced mozzarella cheese and slivered fresh basil and some balsamic vinegar and a cool drink makes a light lunch too; Once summer farmer's market tomatoes are ready, that is really good; I do a lot of cold pasta salads with fresh mock crab in it and peas, and cubed cheese and a lighter dressing, either Italian or some vinegarette type dressing or some other light mayonnaise creamy dreassing if you like creamy mayonnaise is always good. Ravioli with canned stewed tomatoes and fresh shaved parmesan is also fast and easy. But I have the summer food blahs too. So anybody who posts anything here that wouldn't be something I would come up with would be much appreciated;

Stir fried veggies with rice is always good, you can do some with meat or some with edamame for protein. My DH is good at making crepes, and you could do some vegetarian and some with meat. Also tortillas or taco salads would be pretty easy to make vegetarian. I make some pastas that are served room temp, making them good options for the summer. Like I'll just make pasta (farfalle, penne, whatever) or use quinoa and then add to it olive oil, herbs (basil, oregano) and then some chopped up veggies (red bell peppers, tomatoes, sundried tomatoes, olives) and feta or fresh mozzarella cheese and serve it at room temp or chilled. You could add pepperoni or salami to it to make it an Italian pasta salad meal.

Other than grilling and fresh veggie salads my cooking doesn't really change that much for the summer. I don't really use the oven a whole lot even in the winter. There are tons of recipes I have pinned on Pinterest that I really want to try! Especially for burgers. Lots of quinoa ones for salads and burgers. The search feature on there is very helpful!

I made 3 different dinners the other night, but the Asian cabbage wraps I made myself were really good. I sauteed some Gardein fake beef with eggplant, broccoli, peppers and peanuts and then added teriyaki sauce and spice peanut sauce. I wrapped the mixture up in fresh cabbage leaves from our garden.
