Tonight were having Korean bbq stirfry over rice noodles SUPER yummy.
Most super walmarts have lots of gluten free stuff, so that's where we get the rice noodles but you can get them anywhere.. then I mix the Korean bbq sauce with some chicken and steamed veggies then mix in the noodles. Easy yummy dinner.

In honor of DD1's first day of school I made her favorite meal, Stovetop BBQ Chicken with egg noodles and strawberries.

For DD2's first day of school she asked for calzones, so I'm going to give it a try--new recipe. Here's what I'm making:
Calzones
o 16 whole Frozen, Unrisen Dinner Rolls (I Use Rhodes) Note: Can Also Use Frozen Bread Loaves. o 1 Tablespoon Butter o 1 whole Medium Onion, Diced o 1 pound Breakfast Or Italian Sausage o 1/2 teaspoon Italian Seasoning o 1/4 teaspoon Red Pepper Flakes o 15 ounces, fluid Whole Milk Ricotta Cheese o 1/2 cup Grated Parmesan Cheese o 1-1/2 cup Grated Mozzarella Cheese o 2 whole Eggs o 1/2 teaspoon Salt o Black Pepper To Taste o 2 Tablespoons Chopped Fresh Parsley o Marinara Sauce, For Serving o 1 whole Egg Beaten
Preparation Instructions Place frozen rolls (or frozen bread loaves) on a baking sheet to thaw. Cover with a tea towel and let thaw and rise for 2 to 3 hours.
Preheat oven to 400 degrees. Melt butter in a large skillet over medium-high heat. Add onion and allow to cook for a couple of minutes. Add sausage and cook until brown, crumbling the sausage as you stir. Add Italian seasoning and red pepper flakes. Remove from pan and allow to cool on a plate.
In a separate bowl, combine ricotta, Parmesan, mozzarella, eggs, salt, pepper, and parsley. When sausage is cool, stir it in. Set aside.
When rolls are thawed and risen, roll them out on a lightly floured surface until paper thin. Spoon 3-4 tablespoons (approximately) filling onto half of the dough circle. Fold half of the dough over itself, then press edges to seal.
*Note: If you want a larger calzone, use frozen bread loaves and use about 1/4 to 1/3 of the loaf for each calzone.
Brush surface of calzone with beaten egg, then bake for 10-13 minutes, or until nice and golden brown. Serve with warm marinara sauce.

Last night I made pasta for dinner and a rice-veggie salad to have for lunch today (both recipes are posted on the recipes board). Tonight will probably be leftovers since I'm working today.

I have a family member who's out of town so they offered me their CSA box for this week. I picked it up with the intention to figure out recipes that use and/or complement what's in the box. Even though I RARELY make red meat (DH will grill but I am NOT a big meat eater), DD 1 is a total carnivore so I decided to go to Von Hanson's tonight and get some kind of meat for her. I just discovered Von Hanson's this summer when we were grilling brats and burgers and LOVE it. So I went up to the counter and basically asked the teenager working, "What meat can I buy to just throw in the oven and bake 'til it's done?" Hah! He suggested a chuck roast. It's in the oven and I'm serving it with corn on the cob and strawberries from the CSA box and tomato slices from my little garden patch. YUM!

Monday night was chicken chili in the crock pot, last night was a new recipe - Eggplant Marinara Flatbread (I had eggplant to use that was given to me), sadly that was NOT a do-over. It wasn't terrible but the recipe sounded yummier than it was in reality. I have no idea what I'm making for dinner tonight. I may scrounge up some kind of pasta.
