We have a pot luck coming up for one of my classes and I'm looking for ideas on what to bring.
Looking for something easy and relatively cheap -- for about 25 students. What is your go-to dish to share for a potluck?

deviled eggs, bbq mini cocktail weenies in the crockpot...an already put together cheese/pepperoni and cracker tray from Walmart or Sams Club

I usually opt for an appetizer -- artichoke dip with crackers or bread slices, a cheesey / taco dip with chips, hummus with pita slices, something like that. If you want a "main dish" item sometimes I'll do a pasta salad with rotini, pepperoni, genoa salami, olives, bell peppers, chunks of fresh mozzarella and a balsamic-style dressing.

I often bring veggies and dip.
I like to know that there will be something healthy.
If you have a crockpot and place to plug in you could make a couple of packages of the Bear Creek powder soup and have soup and crackers. We love their creamy wild rice and cheesy potato. They are about $3/pkg and make 8 cups of soup, this would be simple and cheap to make a couple of the packets.

Bread boats are also really easy, inexpensive and can feed a bunch of people!

www.cooks.com/recipe/sd1br5i6/corned-beef-dip.html. This one is similar to the one I make... before you chop up the beef in small pieces, rinse half of the beef under water so it doesn't get too salty. And I don't use parsley or shallots (can't remember if this called for them or not, some do)

And I use a LG Italian round loaf, then buy a small loaf to tear up for more to dip
