Microwave Peanut Brittle 1 ¼ cups raw peanuts 1 cup sugar ½ cup light corn syrup ¼ tsp salt 1 tbsp butter 1 tsp vanilla 1 tsp baking soda Lightly grease cookie sheet and set aside. Mix peanuts, sugar, syrup and salt in a large microwave bowl: cook 4 min on high and stir. Cook 3 more minutes on high and stir. Mixture should be bubbly and peanuts browned. Quickly stir in butter and vanilla. Cook 2 more minutes on high. Remove and add baking soda. Stir until mixture is foamy. Immediately pour onto the cookie sheet and spread to desired thickness. ( beware the mixture is very hot so I always use a oven mitt because I have had the mixture burn my thumb.) Let cool and break into pieces. Time adjustments may be needed depending on the microwave.
