Sweet-Spiced Sweet Potatoes
2 lbs sweet potatoes, peeled and cut into 1/2 inch pieces
1/4 cup packed dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon salt
2 TBS butter, cut into 1/8 pieces
1 teaspoon vanilla
Combine all ingredients except butter and vanilla in Crockpot; mix well. Cover; cook on low 7 hours, or on high 4 hours. Add butter and vanilla; gently stir to blend.
