White Chicken Chili
INGREDIENTS: 3 tablespoon olive oil 4 boneless, skinless chicken breast, cubed 1 medium onion, finely chopped 1 (14.5 oz.) can chicken broth 1 (4 ounce) can diced green chiles, drained 3 tablespoons all-purpose flour 2 teaspoon ground cumin 1/2 teaspoon white pepper 1/2 teaspoon dried oregano 1/2 teaspoon fresh cilantro, finely chopped 1/8 teaspoon cayenne pepper 2 (15.8 ounce) cans Great Northern Beans Salt and pepper to taste
Pepper jack cheese thinly sliced (yum) (optional) or Shredded Monterey Jack cheese (optional) Sour cream (optional) Salsa (optional)
DIRECTIONS: 1. Heat oil in a large saucepan over medium-high heat. Cook onion in oil 4 minutes, or until transparent. Add chilies, flour, white pepper, cumin, oregano, and cayenne pepper. cook and stir for 2 mins. 2. in a small pan, partially cook chicken in oil 4-5 minutes 3. In the large saucepan stir in the beans, cilantro, chicken and chicken broth; bring to boil. Reduce heat; simmer for 10 minutes or until thickened. Keep hot till ready to serve. Garnish with cheese, sour cream, and salsa if desired.
