Both people who LOVE chopped liver and those who don't (or who think they don't because they have never tried it) loved this at Passover:
Mock Chopped Liver:
2 onions, chopped oil white wine or grape juice 1 1/2 cups chopped walnuts 5 hard boiled eggs 1 tsp sugar large handful or two of parsley salt and pepper to taste
Saute onions with a little oil and wine or juice until golden. Remove onions and cook walnuts in the same skillet for 1-2 minutes. Place all ingredients in food processor (including any remnants of liquid from pan) and blend together. Season to taste.
My note: This made an enormous amount and I thought it lost flavor after a couple of days (although a friend asked to eat my leftovers because SHE thought the flavor was still wonderful). I would cut this recipe in half (or less) unless feeding a large crowd.
