One of our favorite neighbors died..I told his daughter I would bring bars and a salad to the lunch after the funeral. I have pretty many dessert recipes, but I don't do many salads.
Any ideas?

Easy pasta salad-- medium shells, pesto, cherry tomoatoes, feta cheese and cubed cooked chicken-- Not crazy about feta, but it really adds flavor in this and is not overwhelming

I agree pasta salad. The one I like is easy:
Garden Rotini Carrots Pepperoni Shredded Cheese Red & Orange Peppers (if in season) Broccoli (sometimes) Italian Dressing right before serving to taste.

another pasta salad: ring pasta hardboiled eggs chopped onion can of tuna small can of peas Miracle whip thinned a bit with milk salt and pepper

watergate salad
one can of crushed pineapple (use juice and all) one package of pistachio pudding one container of cool whip one bag of mini marshmallows mix... done

My Deepest Sympathy to you and your family upon the death of your neighbor. How about a Seven Layer Salad? I really like them and have had them at funeral meals. 7 LAYER SALAD Printed from COOKS.COM ---------------------------------------------------------------------------- 1 head lettuce, chopped 1 layer red onions 1 layer cauliflower 1 layer carrots, grated 1 layer cheese, grated 1 layer bacon, grated 1 c. salad dressing Layer each ingredient in dish. My husband makes a broccolli salad that everyone seems to love you could do something like that.
