supermommy that sounds good. I am so craving mexican (authentic mexican). We went to Olive Garden last night and ate way too much to celebrate our anniv. early.
Tonight is something non-meaty.

Last night was Wendy's. Tonight we are making burgers on the grill with potato salad and chips. Tomorrow night is ham dinner.

I've got the crockpot going today with the Chicken Chili recipe (it's been posted a number of times). I love that one ... only problem is that my DH will eat it one time, the kids will pick at it one time, then I eat the leftovers for days. I'll plan to put some in the freezer this time so I don't get sick of it!

Chicken Helper - honey mustard w/rice. I was going to make Tangy Chicken but forgot to read the recipe and it needed to marinate. Oops.
I'm not a big fan of the meal. I'm having pb toast and cheerios. My favorite meal!

Saturday: Leftovers.
Sunday: my paretns took us to the Pizza Ranch--so good. THey took us out for watching their house while they were gone.
Monday: Chicken.
Tuesday: Going to try to make chx. quesidillas.

MONTEREY CHICKEN 4 boneless, skinless chicken breasts 1/4 c. bar-b-que sauce ( I use Bull's Eye) 1/4 c. real bacon bits 1 c. colby and jack cheese, shredded 1 14 oz. can Rotel tomatoes, drained (canned with green chilies added) sliced green onions pepper Preheat oven to 400 degrees. Pound out chicken breasts to flatten. Season with pepper. Grill chicken until no long pink (we used our George Foreman grill) and place on baking sheet covered with foil. Top each chicken breast with one tablespoon bar-b-que sauce, 1/4 c. cheese, 1/4 c. tomatoes, green onions and one tablespoon of bacon bits. Place in oven and bake until cheese is melted (about 5 minutes). ***instead of grilling it I just baked it and the last 5 minutes added the toppings to it kimmccrary.blogspot.com/2010/05/perfect-day.htmlTomato, Olive, Mozz, Basil Salad Tomato, Olive, and Mozzarella Salad with Basil Vinaigrette (Makes about 4 servings) 1 can large black olives, cut in half (6 oz. olives after draining) 3 cups cherry tomatoes, cut in half 1 cup fresh mozzarella pearls, cut in half (or use regular fresh mozzarella and cut into pieces 1/2 cup vinaigrette dressing (I used my favorite vinaigrette, but any type of homemade or bottled vinaigrette that you like will work. A good choice would be Newman's Own Olive Oil and Vinegar Dressing, which is widely available and has only 1 gram of sugar.) 1/2 cup chopped or torn fresh basil leaves salt and fresh ground black pepper to taste Drain olives and fresh mozzarella pearls while you cut cherry tomatoes in half; place tomatoes in bowl. Cut olives and mozzarella pearls in half and put in bowl with tomatoes. Wash basil and spin dry in salad spinner or dry with paper towels, then chop or tear basil into small pieces. Mix chopped basil into vinaigrette dressing, then gently combine dressing with the tomato mixture. I made that Bacon Chicken Ranch on Sunday and boy oh boy is that good! And it only took 4 hours in the crockpot! Last night I had a salad, tonight is Fajitas.

Yesterday I said I was making chx. last night well I ended up making Rosemary Chicken w/ Orange Glaze. Sounds fancy, but it wasn't. Fun to make. Yummy. I got the recipe from this website: www.allrecipes.com.
