Yesterday, Costco Baked Salmon (already pre-fab in a tinfoil baking pan) and side salad; A little oily compared to if I make it myself; But pretty good and easy-peasy; Throw out the disposable pan when done; I really like zero clean-up.
Tonight; Left-over chicken and corn with diced tomatoes added, mexican shredded cheese added, and made into Chicken Quesedillas with sour cream, guacamole, and salsa for me, husband, and one kid; Other kids - left-over mac'n'cheese or left-over tomatoe soup.

Sweet and Sour chicken with brown rice This is the recipe I use which is really good. We just make the sauce and grill up the chicken since it's a very long process to make it the way the recipe says. I made Stovetop BBQ Chicken with egg noodles, steamed broccoli and carrots, and cantaloupe.

wheat rotini, spagetti sauce, and turkey meatballs tonight (made by husband - yea!).
For tomorrow night's pulled pork sandwiches (and rest of week too) -- just put in crock pot, 7 lb. pork shoulder with 2 large onions chopped up, 1 1/2 cans gingerale, cook on low for 12 hours; Then take meat out and shred, put meat back in, cook for 4-6 more hours, add barbeque sauce of choice then or after all done; Also made coleslaw from prefab coleslaw mix bag, adding coleslaw dressing to marinate until tomorrow night when it is ready; Will serve on sesame seed buns with coleslaw on side or on bun -- whichever way person wants it.
Recipe says left-over shredded pork freezes well and can be used later with adding a little more BBQ sauce of choice. So may have dinner for a few nights until sick of it, then freeze for later.

DH requested Aunt Dee's Chicken Florentine tonight (it's in the menus) so I've got that in the oven, and then I'll make some green beans to go with it + clementines.
