Since I'm working today I asked DH to make crepes for dinner. (You have to make the batter early since it has to chill for 4 hours beforehand.) We'll have fruit too and I'll make a salad for myself to go with it. Yum!

Did this on Thursday (recipe from Food.com website; Called Pulled Pork (Crock Pot) by duonyte on July 25, 2005)
Doubled it as had a larger Pork Butt/Shoulder Roast
For tomorrow night's pulled pork sandwiches (and rest of week too) -- just put in crock pot, 7 lb. pork shoulder with 2 large onions chopped up, 1 1/2 cans ginger ale, cook on low for 12 hours; Then take meat out and shred, Drain almost all liquid and all fat from crock put (there is a lot) and put shredded meat and onions back in, cook for 4-6 more hours, adding barbecue sauce of choice at beginning of last 4-6 hours cooking and stirring through so mixed completely; It was really easy; We as a family of 5, have been eating it for Thursday, Friday, and Saturday lunch or dinners, and took some to an ill elderly relative who is ill right and doesn't have enough energy to cook, and there is STILL enough left for 1 or two more dinners; Probably freezing the rest.
ONLY CHANGE I would have made, is cooking it only 4 hours on second part as 6 hours was too long in my hotter than normal crock pot; Also if making this much, you need to have a 6 or 7 Quart Crock Pot as too much liquid comes from pork as cooking, or it will overflow onto you counter).
Also made coleslaw from prefab coleslaw mix bag, adding coleslaw dressing to marinate until tomorrow night when it is ready; Will serve on sesame seed buns with coleslaw on side or on bun -- whichever way person wants it.
Thinking this would be a great weekend crock pot recipe when doing stuff around the house but not always home or a game night recipe. TRY it.
I could not believe how good it was for no effort. I have done huge amounts of pulled pork for large parties of 30-50 people in large Nescoe roaster (that was way more work) and this was about as good.
BBQ sauce we use most often for Pulled Pork is Sweet Baby Ray's Original Barbecue sauce as most people like it, versus others that we like more, but guests or elderly thinks has too much kick.
