Cilantro lime chicken tacos. I cooked the chicken in lime juice, cilantro, chopped garlic, chopped green onion, salt & cumin. It turned out good...would've been better if I had fresh garden salsa. I also used monterey jack shredded cheese...yum.

tonight it's bacon wrapped pork chops, twice baked potatoe casserole, green salad, with pumpkin swirl cheesecake for dessert. It's hubby's birthday meal!

Well for lunch we had dickeys BBQ ...this is embarrassing but for dinner we had cookies. We are all sick so I don't care to cook and it's whatever, haha

The other day I made really really good fajitas. Ingredients: green peppers cut in strips, a sweet onion cut in strips, 2 roma tomoatoes , chicken breast, fajita seasoning
I put the chicken in the bottom of the crockpot and added water to cook. On top of that I added all the veggies and the seasoning. Cooked on low all day. Once everything was cooked I drained almost all of the water and then added a taco seasoning packet (since I ended up draining alot of the fajita seasoning and all I had on hand was taco seasoning)
I also bought some guacamole and put ff sour cream, guac, salsa, cheese and then the fajita stuff. It was AWESOME!

I took the time to make a really good one tonight: Pork blade Steaks marinated in a Tuscan Sun-dried tomato sauce, w/ Stuffing and stir-fried zucchini and Yellow squash. Smells delicious

Beef roast with potatoes and carrots in the crockpot. I haven't even opened it once all day. I hope that means it will be done and delicious. If not? Peanut butter sandwiches.
