My DH and one of my DDs LOVED the Crock Pot meatloaf, so I'll share the recipe:
Crock Pot Meat Loaf
1 large onion, chopped 1 bell pepper, chopped 2 eggs beaten ¾ cup of milk ¾ cup dry bread crumbs or cracker crumbs 1 envelope Lipton Onion Soup mix 2-3 pounds of ground beef
Line Crock Pot with foil. Mix together the eggs, milk, crumbs, and soup mix. Add the meat, onion, and peppers, and mix well. Shape into a loaf and put into the crock pot. Cook on low for 6-8 hours. If you like, two hours before eating you can put Ketchup on the top of the loaf.

Tonight we had leftovers from last night's crock pot meal -- sausage and lentils. Here's the recipe:
Crock Pot Lentils and Sausage 1 (16 oz) package dry lentils 1 (16 oz) can diced tomatoes, drained 2 (14 oz) cans beef broth 3 cups water 2 medium carrots, chopped 2 pounds Kielbasa sausage, cut into 1/2-inch pieces 2 stalks celery, chopped
Rinse and drain lentils, but do not soak. In a slow cooker, mix together all of the ingredients. Cover and cook on high for 3 hours or low for 6-7 hours. Stir well before serving. Can serve with warm bread.
